Pineapple Cilantro Beer Cocktail

Holy crap the sun is finally out. Time to enjoy a little somethin’ somethin’ by the pool. The only problem is you’ve been yelling for the last hour “ALFRED! BRING ME A COCKTAIL AT ONCE!” and no one’s come because, like the rest of us, you don’t have a butler and you’re not Batman. Making your own cocktail is too darn intimidating and beer isn’t sophisticated enough for your fine middle class palette. What on earth are you to do?

You get off your lazy ass and make yourself a beer cocktail that will BLOW YOUR MIND. Scout’s honor.

Ingredients (serves 1):
  • 2 parts white beer (I used Kronenbourg Blanc 1664 which has underlying tones of cilantro)
  • 1 part pineapple juice
  • 1 Tbsp of fresh cilantro leaves, whole
  • Lime and pineapple slices for garnish

Directions: In the cocktail glass of your choice, crush the cilantro leaves with a pestle to release their flavor. Add the beer and the pineapple juice, mix lightly. Add lime and pineapple slices for garnish.

  1. Oh my. This sounds amazingly good. It’s a pity that it’s freaking cold here in Perth now or I’d be rushing out to buy ingredients for this glass of deliciousness. Hm. Maybe I’ll do it anyway, and drink one whilst snuggling under a warm blanket. It sounds too good to wait months before trying it! xx
