Spicy Crab Cucumber Cups

Crab Stuffed Cucumber Cups

I always serve little bite sized appetizers when I invite my friends over for hangouts, and these never last very long at the table. You can change around the ingredients here… once I added japanese seaweed (nori), for a little crunch. Or why not make them extra creamy by adding sour cream. Whichever way you decide to make them, you really can’t go wrong. Have fun, and get creative!

  • 1 package pollack crab (chopped)
  • 2 cucumbers (peeled)
  • Ā ~2 Tbsp mayonaise (more or less)
  • ~1 tsp thai spicy sauce (more or less)
  • 2 tsp chopped dill
  • salt & pepper
  • (optional: capers)
  • (optional: + 1 tsp dijon mustard)
  • (optional: nori)
  • (optional: + 1 Tbsp sour cream)

Peel cucumbers, then chop approximately into 1 inch ‘bites’. Scoop out seeds. In separate bowl, add remaining ingredients, mix. Add spoonfuls into cucumber. Serve!

  1. Believe it or not, I never liked cucumber (but I love pickles)… until about a week ago! Now that I’ve tried it again, I really like it. I bet crab and cucumber are awesome together – I mean, who doesn’t love a california roll? šŸ™‚

      • This sounds crazy but I just had fresh cucumber slices in a baby kale salad. There was seriously nothing unique or special about them – in fact, they couldn’t have been any plainer. I think I just loved how fresh and light they were. Then, this past weekend I was playing around and made theeeee most delicious Asian-inspired cold cucumber salad with vinegar and EVOO. I’ll definitely be making it again soon so I can take pictures this time and share it!

  2. What a fun tapas. I love the color of the dressed crab against the green of the cucumber. The crisp crunch of the cucumber must be refreshing after the spicy crab.

  3. WOW as I sit here feeling hungry I checked out this recipe. I looks really yummy. I love cucumbers and I love seafood. This looks like a great snacking food packed with vitamins that I definately need. šŸ™‚ Thanks for sharing.

Omg... I need to leave a comment
