Double Nutty Oatmeal Vanilla Bake


Super healthy and super versatile… this recipe can be for breakfast, snack time, or even dessert. Filled with almonds, walnuts, coconut, and greek yogurt- it’s also the perfect pre-workout “meal”. Cut it up into tiny squares, saran wrap these bad boys- and you’ll have enough for an entire week.

Oatmeal Vanilla Bake

As previously mentioned in my Chewy Chocolate Oatmeal Cookies, I am slightly in love with oatmeal. So expect quite a few more oatmeal recipes from this Porto Bella. Also, feel free to change up the ingredients here- if you’re not a fan of shredded coconut, use some shredded carrots! (Ouu, must try that one day…). Go ahead and add more brown sugar on top if you’re trying to win over someones heart ;). And as most of my recipes are, this one is easy and won’t take you more than 15 minutes to prepare. Maybe even 8 minutes. Bake away!

Serves: ~15 squares


  • 3 Tbsp margarine
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 5 Tbsp vanilla Greek yogurt
  • 1 egg
  • 1 1/2 cup oats
  • 1/2 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup almonds (chopped)
  • 1/3 cup walnuts (chopped)
  • 1/2 cup shredded coconut
  • 1/2 tsp vanilla extract
  • Strawberries for decoration


Preheat oven to 350 F. Grease 9 x 11 baking dish. In large bowl, add margarine, both sugars, and yogurt- mix until smooth. Add egg, salt, cinnamon, vanilla extract, baking soda- mix. Then add all remaining ingredients (oats, almonds, walnuts, coconut, whole wheat flour), and mix one last time. Spread evenly into baking dish and add strawberries layered on top. I knew I was going to cut it up for individual portion size snacks, so I added a strawberry for every square ;). Bake for 27 minutes. Remember, if you’re cutting it up, to only do so when it has completely cooled. Or else you’ll have a little mess on your hands!

    • What a nice description!! If only we could be sweating on a hot summer afternoon right now… It’s -26C (and “feels” like -37C according the weather network), in Montreal today. Maybe i’ll make myself some ginger lemonade to trick my brain. Thank you for the follow!
