Upon viewing our Colorful Chicken Wrap post, one of our lovely followers asked a very important question: How do you roast a red pepper? As promised Miss Heather Ham, here is the answer to your question.
Ingredients (yields 1/2 cup):
- 2 red peppers, seeded and halved
- 3 Tbsp of extra virgin olive oil
Directions: Preheat your oven to 350ºF. On a baking sheet lined with parchment paper, place your 4 red pepper halves and drizzle olive oil on top. Roast in the oven for 1 hour.
Once out of the oven, let the peppers cool for about 15 minutes. Peel off the peppers’ skin with your fingers (it should come off easily). In an air tight container, store your oven roasted red peppers in the fridge. You can add these to your salads, sandwiches, pizzas, you name it!
N.B. I’ve used red peppers in this recipe, but feel free to use orange or yellow peppers! Also, I’ve received great advice from our #1 fan and manly man Phil: “You can also roast your peppers on a BBQ grill or gas stove top . To cool them down put them in a bowl of cold water with ice”.
