Basics: Caramelized Onions

I love caramelized onions. Their transformation from bitter to sweet when slow cooked in a pan amazes me. I usually keep them in a 500mL mason jar in the fridge for up to 2 weeks. That way, I have them on hand to add to rice, potatoes, pizzas, meats, salads, sandwiches, etc. Ya, I put that S#!% on everything. So what? They’re just so versatile!

Ingredients (yields 500mL)

  • 4 large onions
  • 1 Tbsp of olive oil
  • 1/2 Tbsp of brown sugar
  • Salt & pepper

Directions: Cut the onions into thin strips 1/4 inch in thickness (I use a mandolin to do this, much quicker and easier). In a large non stick pan over medium heat, add the onions, the olive oil and salt & pepper to taste. Cook for 40-50 minutes. Stir the onions every 10 minutes to make sure they cook evenly and don’t stick to the bottom of the pan. If you notice the onions are burning instead of browning, add some olive oil. Once the 40-50 minutes are up and the onions have reached the color you want (light to dark brown depending on how caramelized you like your onions!), turn off the heat and mix in the brown sugar.

Flavorings: You can also add flavorings to your caramelized onions. I often use wine or beer. In any case, the preparation will be slightly different. Instead of letting the onions “do their thing” for 40-50 minutes, you’ll need to alternate between cooking your onions on medium heat for 10 minutes, adding 1 1/2 cup of wine or beer and bringing it to a boil for 10 minutes or until the onions have absorbed the liquid. In other words, this is what you need to do:

  1. Cook onions for 10 minutes on medium heat.
  2. Add 1 1/2 cups of beer or wine and bring to a boil for 10 minutes on high heat.
  3. Reduce heat to medium, cook onions for 10 minutes.
  4. Add 1 1/2 cups of beer or wine an bring to a boil for 10 minutes on high heat.
  5. Reduce heat to medium, cook onions for 10 minutes.
  6. Remove from heat, mix in brown sugar.

Music: This was an obvious one. Adding brown sugar to caramelized onions makes all the difference! Rolling Stones it is.
