Double Chocolate-Orange Vegan Cupcakes

Say hello to the best cupcakes I’ve ever made. We’ve got one man down and it’s only been an hour. (As a responsible food blogger, it is my duty to taste-test everything, right? Yes.) These are completely vegan; made with chocolate soy and cocoa (hence the double chocolate), with fresh orange extract in both the batter and frosting. I cheated a little with the frosting though. I bought a pre-made vegan creme cheese frosting, but then spiced it up with fresh orange peel and juice. So it’s sort of homemade :P. I seriously can’t wait to share these tonight!

12 Cupcakes

Ingredients for cupcake batter:

  • I cup chocolate soy milk
  • 1 tsp red wine vinegar
  • 3/4 cup white sugar
  • 1 tsp vanilla extract
  • 1 tsp orange extract (I used a fresh orange)
  • 1 tsp orange peel (minced)
  • 1/3 cup vegetable oil
  • 1 cup white flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup cocoa powder
  • 1/4 salt

Ingredients for frosting:

  • 10 (heaping) Tbsp creme cheese frosting (vegan)
  • 10 tsp of fresh orange juice
  • 1 tsp orange peel (minced)
  • A few drops of red & yellow food colouring

Directions: Preheat oven to 350°F and spray muffin tins or line with paper. Add the chocolate soy milk and vinegar in a large bowl and whisk for about a minute. Set aside. In separate bowl; add flour, baking soda, baking powder, cocoa powder and salt. Mix lightly. Add sugar, vegetable oil, vanilla extract and orange extract & peel to chocolate soy mixture. Mix lightly. Pour dry ingredients into wet ingredients and mix until blended well. Pour into cupcake tins and bake for 20 minutes. Let cool completely before adding frosting. EAT!

    • I found mine at my local grocery store (vanilla icing with creme cheese “flavour”). To be honest, it didn’t taste much like creme cheese, which is why I added lots of orange flavour. I wish I made it from scratch!
      I know that Duncan Hines frostings are mostly vegan and PETA has a list online you can check out.
      You can also check specialty health food stores or a kosher store in your community.
      Last resort- make it from scratch with a vegan cream cheese like Tofutti.
