Sweet Candied Carrots

This recipe came about by accident. I was cooking with friends and decided to do a simple side of carrots- and then suddenly, inspiration came out of nowhere. (Or it could have  been my sweet tooth speaking up to my subconscious; “more sugaaaar!”) But in the middle of tossing these colourful carrots around in the skillet, I decided to give them some extra flavour by adding a touch of sugar, cinnamon and sliced apples. They turned out really yummy, and it was needless to say, a crowd pleaser.
Ingredients: (serves 5)
  • 8 medium carrots
  • 1 red apple
  • half an onion (diced or sliced)
  • 4 Tbsp of butter (or margarine)
  • 1 Tbsp of sugar
  • dash of Cinnamon
  • Salt & Pepper to taste.

Directions: Clean and peel both carrots and apple. Cut into roughly the same thickness. Heat non-stick skillet on medium heat and begin cooking carrots in a bit of butter for 20 minutes, adding more butter when needed so carrots do not stick. At the 10 minute mark, add diced onions with half the sugar. At the 17 minute mark, add the apples, remaining sugar, cinnamon, butter, salt and pepper. Cook until carrots are soft and apples are warm but not too soft. EAT!

N.B. If at anytime you feel the carrots are sticking too quickly in your skillet; add a dash of warm water, broth or even wine to deglaze them.
