Sweet Potato Mash

Ok! This is going to be a quick little post because: a. my time management skills have been horrible since i’ve been studying for midterms and b. i’m late for thanksgiving dinner.

But I just HAD to post this Sweet Potato Mash, that’s still hot on the kitchen counter getting ready to be devoured by my family. I got inspiration from reading a recipe online 2 years ago… it was called the “Southern Sweet Potato Mash” and it was amazing! And… the website that I had it bookmarked on, no longer exists. (Of course!) So I came up with my very own… and it ain’t too shabby 😉 ENJOY!!!

Serves: Your entire family, then some.

Ingredients: 

  • 5 large sweet potato’s (Peeled, chopped)
  • 5 Tbsp butter
  • 6 heaping Tbsp brown sugar
  • 1 1/4 cups of warm milk
  • dash of cinnamon and nutmeg (to your own taste)
  • salt & pepper
  • Optional: Cheese sprinkled on top (such as cheddar)

Directions:

Peel and chop sweet potato’s and add in large pot of salted boiling water. Boil for 15-20 minutes or until soft enough to mash. Drain. Return potato’s in large pot on low/med heat and add butter and milk. (Make sure milk is warm. I would also suggest adding milk half a cup at a time- to get your own preferred consistency.) Begin mashing and add lots of salt and pepper. I added quite a few dashes of cinnamon and a touch of nutmeg. Transfer to glass dish and serve. (Or if adding cheese: add in pre heated oven at 400° and bake for 5-7 minutes until cheese is melted.) EAT!
