Summer is ending. Fall is beginning. Winter is coming. I know. You’re sad. I get it. It’s a reality that we’ll all have to cope with eventually. You can choose to stay in denial & wear your flips flops until your toes fall off. You can also choose to accept the changing season & take comfort in … comfort food. Besides, oven roasted sweet potato just tastes better when it’s cold outside, amirite?
- 5 sweet potatoes cut into bite size pieces
- 3 Tbsp of extra virgin olive oil
- 1 Tbsp of coconut milk (optional)
- 3 Tbsp of honey
- 2 cloves of garlic, minced
- ¼ tsp of cinnamon
- ¼ tsp of nutmeg
- ¼ tsp of turmeric powder
- ½ tsp of garam masala
- ½ tsp of curry powder
- 1 Tbsp of fresh rosemary
- ½ tsp of salt
- Freshly ground pepper
Directions: In a bowl, mix olive oil, coconut milk (optional), honey, garlic, cinnamon, nutmeg, turmeric powder, garam masala, curry powder, rosemary, salt & pepper. Toss the sweet potato in the mixture until completely coated. Place on baking sheet in a 400ᴼF oven for 30 min or until sweet potato is tender & slightly caramelised. Yields 3-4 portions.
