Maybe it’s the 2012 Olympics or the rainy weather outside, but today, I’ve got England on the brain. And it doesn’t help that my friend Sarah brought the cutest little bite size cucumber sandwiches to a potluck a few weeks ago. They’re easy, fresh & light and perfect with a cup of Earl Grey tea.
- 9 pieces of white or brown sliced bread
- 1 English cucumber, thinly sliced
- 1 ½ cups of cream cheese
- 1 Tbsp of fresh dill, minced
- 1 Tbsp of fresh mint, minced
- Freshly ground black pepper
Directions: Mix cream cheese, dill, mint & black pepper together. Take a circular cookie cutter roughly the size of a cucumber slice & cut 36 circles of bread. Spread cream cheese mixture on one side of each circle. Take one circle with cream cheese mixture facing up & place one cucumber slice on top. Cover with second circle with cream cheese mixture facing down. Spread cream cheese mixture on opposing side of second circle & place a second cucumber slice on top. Add a mint leaf or dill branch on top for decoration. Yields 18 sandwiches.
So here’s what the finished product should look like (for those of you who got lost in my explanation): bread-cream cheese-cucumber-cream cheese-bread-cream cheese-cucumber. Now go & enjoy a game of cricket while listening to some PJ Harvey. Cheerio lads!
